Ingredients

  • 200 grams of fresh raw tuna
  • 2 tablespoons of chopped chives
  • 1 tablespoon of soy sauce
  • 1 tablespoon of rice vinegar
  • 1/2 teaspoon of truffle oil
  • 1 raw quail egg yolk (optional)
  • A handful of black and brown sesame seeds.

Preparation method

  • Cut the salmon and scallions into small cubes. Place in a bowl;
  • Mix the soy sauce and rice vinegar to create the sauce and pour it into the bowl;
  • Add the truffle oil;
  • Sprinkle with sesame seeds;
  • Place the quail egg yolk next to the tuna, if desired;

    Ingredients

    • 600 grams of fresh salmon
    • 500 ml of olive oil
    • 60 grams of mustard
    • 50 ml of honey
    • 30 grams of fleur de sel

    Preparation method

    Preparation method

  • Heat a frying pan with olive oil and lightly sear all sides of the fish. The inside should remain raw.
  • Remove and set aside the frying pan;
  • Let the fish cool and then slice it thinly;
  • In a frying pan, add the lemon juice, sesame oil, and ginger juice. Let it cook for 1 minute and set aside.
  • Slice the avocado, lettuce, and red onion thinly;
  • In another ungreased frying pan, toast the sesame seeds until crispy;

    Ingredients

    • 500 grams of fresh tuna

    Preparation method
