🍗 1/2 chicken (500 grams with bones)🥚 2 free-range eggs

🦴 1 salted bone (preferably from the knee)
🧄 1 leek
🍖 100 g of Serrano ham
🍜🍚 120 g of soup noodles (or the same amount of rice)
🌿 Fresh mint leaves

The recipe for picadillo soup has its origins in Andalusian cuisine, especially in the provinces of Seville and Almeria. The main ingredient is always minced poultry, which is often accompanied by boiled egg and sometimes also rice.
There are few things that are as comforting on cold days as a good soup, and if it also includes meat and other ingredients that make it more succulent, the effect is unbeatable. The chicken soup that we are going to prepare is also very simple and inexpensive, a fantastic way to have a first course for lunch during the winter months and, why not, as dinner.
Normally it is prepared with finely chopped egg, but at home we like to find the pieces quite large so we have opted to leave them in slices. If you prefer to follow the traditional recipe you can change that part and break up the eggs well so that they are barely noticeable and, at the same time, add some consistency to the soup. Finally, you can always add croutons if you want to give it a crunchy touch, or bread crumbs to make it even thicker.

Preparation of the minced meat soup
- We peel and wash the carrot and do the same with the leek, also cutting it into two large pieces. We put everything in a pot together with the chopped chicken and the salted bone. We have chosen a piece of spine, but a piece of calf bone is also great, for example from the knee.
- We cook everything together for at least 1 hour, if using a pressure cooker 20 minutes is enough.
Cooking the eggs and final presentation of the soup
- At the same time, we boil the two eggs in plenty of water. When the chicken and vegetables have finished cooking, we strain and reserve the broth. We let the chicken and the bones cool down so as not to burn ourselves, and we remove the bones.
- Chop the ham (if you haven’t bought it in strips) and the mint leaves. Peel and cut the egg into small pieces or slices. To suit your taste.
- Place a saucepan on the heat. Pour in the strained broth, add the meat, ham, egg and mint. Add the noodles (4 servings) and cook everything together over medium heat for the time indicated.
- We serve in bowls. First a couple of spoonfuls of broth and then a good amount of noodles and the rest of the ingredients.
