  • 1 teaspoon of ground cumin
  • 1 teaspoon of gram masala
  • ½ teaspoon of hot paprika
  • Juice of two lemons
  • Salt to taste

Preparation method

  • To make the filling, start by heating the pan with the tablespoons of oil over medium heat;
  • Add the peas, ginger, chopped chili pepper, and three tablespoons of water;
  • Reduce the heat, cover the pot, and simmer until the peas are cooked. Stir occasionally and add a little more water if the mixture dries out.
  • Once the peas are cooked, add the potatoes, cilantro, cumin, garam masala, hot paprika, and salt. Mix everything together and let it cook for 4 minutes.
  • Finish the filling with lemon juice, turn off the heat and let it cool;
  • If your dough is circular, cut it in half and fold it to form a triangle;
  • Add the filling and seal the dough using a fork;
  • Fry the pastries in hot oil and serve.

    • 3 cups of wheat flour

  • Grease the pan with olive oil and add the garlic, red onion, carrot, cauliflower, potato, and chili pepper;
  • Mix the curry, paprika, coriander seeds, and turmeric to create a spice blend. Add it to the pan along with bay leaves to taste and stir well.
  • If desired, add cilantro and scallions;
  • Add a little water and let the filling ingredients cook until they are soft and the mixture has dried out;
  • For the dough, mix the flours in a bowl;
  • Add a pinch of salt, the butter, and the warm water. Stir with a spoon until cool, then knead well with your hands.
  • Take small pieces of dough and roll them out into a circular shape;
  • Using your hands, shape the dough into a cone;
  • Place a spoonful of filling at the bottom of the cone;
  • Seal the dough well. It should resemble the shape of a small pie;

    Preparation method

  • To make the dough, mix the wheat flour, 2 tablespoons of oil, salt to taste, and a little water to bind it together using your hands;
  • Once the dough is firm, roll it out and cut it into half-moon shaped pieces. Set aside.
  • Blend the chili pepper and ginger in a blender. Set this paste aside.
  • Pour the oil into the pan and heat it;
  • Add the paste, cumin seeds, chestnuts, and raisins. Let it cook for 1 minute;
  • Add the peas, ground cumin, and grand masala to the pan;
  • Finally, add the potatoes and salt to taste. Mix well, turn off the heat, and wait until it is lukewarm before using the filling.

    Preparation method

  • To make the dough, mix the flour, salt, lemon zest, and butter. Mix with your hands until it reaches a crumbly texture;
  • Add the cream cheese and stir until you have a soft dough that no longer sticks to your hands;
  • Cover the dough with plastic wrap and refrigerate for at least 30 minutes;
  • To start the filling, cook the potatoes until tender. Peel, mash, and set aside;
  • Heat the pan with butter, curry, and onion. When it starts to brown, add the garlic and ginger;
  • As soon as the mixture begins to smell fragrant, add the mashed potato, sugar, salt, pepper, nutmeg, and lemon juice. Stir, turn off the heat, and let it cool slightly.
  • Sprinkle a surface with wheat flour. Divide the dough into 12 pieces and shape them into balls;
  • Roll out the dough balls with a rolling pin until they form a very thin disc. Cut each disc in half to obtain 24 half-moon shaped dough pieces;
  • Open a half-moon shape and fold it in half, joining the straight sides to create a cone shape;
  • Add the filling to the center and close the openings by pinching them closed with your fingers. Fold the tip over.
  • Arrange the samosas on an ungreased baking sheet and refrigerate for 15 minutes.
  • Preheat the oven to 180 degrees;
  • Place the baking tray in the oven and leave for 20 minutes;
  • Remove from the heat and serve with chutney and chili sauce.
  • 5. Chicken Samosa

    Ingredients

    • 1 package of samosa sheets
    • 1 kilogram of ground chicken breast
    • 1 kilogram of onions
    • 1 cup of fresh cilantro to taste
    • 1 green chili pepper
    • 4 tablespoons of lemon juice

    • 250 grams minced meat
    • 1 ripe tomato
    • 1/2 green or red bell pepper

  • Arrange the samosas on a baking sheet lined with parchment paper. Lightly brush each samosa with oil.
