Ingredients

🍶 1 natural yogurt of 125 g
🥣 3 measures of yogurt glass with wheat flour with yeast (for baking)
🥚 3 medium eggs
🫒 1 glass measure of yogurt of smooth extra virgin olive oil

🍂 1/2 sachet of baking powder (7 g)
🍂 1/2 teaspoon ground cinnamon
🍦 1 teaspoon vanilla essence
🍏 3 large apples
🧂 1 pinch of salt
🍋 The zest of a lemon
🍑 Apricot or peach jam (optional) to make the cake shine

 

This cake recipe mixes the recipe for walnut cake with that of apple pie . It adds that touch of fruit that makes it almost irresistible. Perfect for baking at home and having a piece for breakfast.

A very spongy cake with all the flavour of this fruit that everyone loves. In addition, we combine a very rich fruit that has a great satiating power and is very low in calories with the classic breakfast or snack cake. A successful mix that beats any industrial cake.

Apples are an easy addition to both savoury and sweet recipes. They are undoubtedly one of the most appreciated fruits in our culture and the star fruit in the north of Spain, especially in Asturias. It is understandable that any dessert we make with apples is a favourite with everyone.

How to make the apple cake: Easy Recipe 🍰

 

Preparing the apple cake

  1. In a large bowl, beat the eggs with the sugar until they double in volume. When they have doubled, add and mix the yogurt with the eggs.
  2. We must beat them very well to give sponginess to our cakes, the more airy they are, the better they will turn out. We mix the yeast with the flour and add it to the previous bowl, we beat again.
  3. In the same bowl, add a pinch of salt and the extra virgin olive oil (or sunflower oil if you prefer). Blend everything until there are no lumps.
  4. It’s time for the flavourings. Wash the lemon and grate it on top of the cream. Add the vanilla and cinnamon powder. Beat and the cream is ready, it will be the base of our cake.
  5. Preheat the oven to 180º C.
  6. Peel the apples and remove the core. Cut them into very thin slices (1 or 1.5 mm). Peel and slice the apples at the last minute, as they oxidise and spoil when they come into contact with air.
  7. Pour the mixture into a buttered container. If you have a removable mould (like the one in the step-by-step photos) you don’t need to grease it.
  8. Just before putting it in the oven, add the apple slices on top of the cake. Cover the cake batter with the apple slices starting from the centre and in circles until reaching the edge. The cake should be full of apples. If 3 apples are not enough, use another one. You will see how it looks in the step-by-step photos.

Baking and final presentation

  1. Place the cake in the oven at 180ºC for about 45–50 minutes (depending on your oven). Use the top and bottom heat setting, on the rack at medium height so that the heat is uniform and the base does not get too hot.
  2. If you don’t have a rack, use a tray. Prick the cake with a fork after about 40 minutes and when it comes out dry it will be done.
  3. While it is baking we must ensure that the bun is rising evenly, remaining a little more swollen in the centre (it is even acceptable for it to open a little in the centre, there is always some crack).
  4. If it rises more on one side than the other, there is something wrong with our oven. Another common problem is that the cake comes out on the sides, which usually happens because we have used too much baking powder.
  5. It is important to measure it well, there is no problem with the sachets but if it is from a jar you have to add 12 grams.
  6. Once cooking is complete, it is best to remove it from the oven immediately so that the heat does not dry it out.
  7. We transfer it to a surface without removing it from the mould yet and wait for it to harden. Then we remove it from the mould and at the same time we don’t burn our fingers.
  8. Many apple pies are topped with a thin layer of peach or apricot jam. Using a silicone or conventional brush, spread a thin layer of apricot jam. This will give the cake a shine, but will also add sweetness. I’ll leave it up to you, it’s optional.
