Tequeños are delicious sticks of melted cheese wrapped in crispy dough. This is a typical Venezuelan snack that has spread around the world due to its simplicity and delicious flavor. They are traditionally made with llanero cheese, a semi-hard, salty white cheese similar to feta cheese. This cheese is different from traditional European cheeses and is not usually eaten alone, but rather as an accompaniment to all kinds of dishes.

Since it's not always easy to find llanero cheese outside of Latin America, we recommend using other types of cheese for this recipe. Our favorites are provolone, Gouda, or mozzarella, although the latter is more difficult to wrap due to its soft texture.

To enjoy perfect tequeños, you can't go wrong with a good salsa. Tequeños are usually served dipped in guasaca (a Venezuelan avocado-based salsa) or pink salsa, but our favorite combination is cheese with strawberry or tomato jam.

Necessary ingredients

With these ingredients, you can make 16 tequeños. Remember that if you're using a very soft cheese or one that melts easily, it's best to freeze them for a couple of hours before frying them so the cheese doesn't leak out.

Preparation30 minsCooking5 minsTotal35 mins
250 grams of provolone or gouda cheeseYou can use any cheese you like, keeping in mind that not all of them melt the same.
 140 grs Flour
 30 ml Warm water
 1 Egg
30 g Butter at room temperature
 1 tablespoon Sugar
 ½ spoon Baking powder
 1 pinch of salt
 Accompanying sauce

How to prepare Tequeños

1. In a bowl, mix the flour, yeast, sugar and salt.

2. Add the warm water, a beaten egg, and the softened butter to the mixture. Knead with your hands until all the ingredients are combined and you have a smooth dough.

3. Cover the bowl with film and let it rest for30 minutes at room temperature.

4. Cut the cheese into sticks about 5 cm long and 2 cm wide. Avoid cutting the sticks too thin, as this will result in almost empty tequeños.
5. Roll out the dough into a rectangle half a cm thick and cut into 3 cm wide strips.

6. Wrap each cheese stick in a strip of dough, making sure to seal the edges well so the cheese doesn't leak out when it melts. If you're using a cheese that melts very easily, such as mozzarella, you can place the tequeños in the freezer for a couple of hours before frying them to prevent them from melting completely.

7. Fry the tequeños in plenty of oil at 180°C. If they're cold, it's best to fry them slowly to prevent the oil from dropping in temperature.

8. Serve the tequeños with strawberry or tomato jam and eat them before they get cold.

What cheese do tequeños have?

The original Venezuelan recipe uses llanero cheese, a fresh, especially salty cow's milk cheese slightly similar to feta cheese. Llanero cheese isn't always easy to find in Europe, and we're generally accustomed to eating other types of cheese that melt better. Therefore, we suggest our five favorite cheeses for making tequeños, so you can choose the one you like best:

  • Plainsman
  • Feta
  • Provolone
  • Gouda
  • Mozzarella
