1. In the mixer bowl, add all the ingredients except the flour and mix at low speed.

2. Once mixed, add the flour little by little by spoonfuls.

3. Knead the mixture until it comes away from the sides of the bowl. Don't let it sit for too long, as over-kneading will make it sticky.

4. Shape the dough into a ball with your hands, tucking the edges under. Cover it with plastic wrap or a damp cloth and let it rise.1 hour in a warm place.

5. Once fermented, flour a flat surface well to prevent the dough from sticking. Using a floured rolling pin, roll the dough out into a 1 cm thick rectangle.
6. Using a large ring, cut out as many donuts as fit in the rectangle. Using a smaller ring, cut a hole in the center of each circle.

8. Fry in a pan with plenty of oil at a gentle temperature.

9. To make the sugar glaze, mix the powdered sugar with water until you get a smooth, liquid texture. Add a few drops of lemon juice to cut the sweetness.

10. To prepare the chocolate glaze, heat the cream until it begins to boil and pour it over the chopped chocolate. Stir well until all the chocolate has melted and you have a smooth mixture.

11. Dip the donuts in the glaze and decorate with your favorite toppings.

Can you make donuts without a mixer?

Yes, of course you can. Using a stand mixer saves time, but it's just as easy to prepare by hand. Simply whisk all the ingredients except the flour together in a bowl. Once combined, add the flour little by little while mixing with a wooden spoon. Once all the flour is added, transfer the dough to a floured surface and knead it like bread dough, until you have a smooth, lump-free dough with a soft surface. You'll know you're getting close when the dough is no longer sticky.

We leave you this video by Beatriz Echevarría that explains very well how to knead by hand:

Can you freeze dough? And donuts?

Yes, both the dough and the donuts can be frozen.

To freeze the dough:

If you plan to freeze the donuts without frying them, cut them out and let them rise on parchment paper. Once they've risen, transfer the paper to a tray and cover it with plastic wrap before placing it in the freezer. The dough will last up to a month frozen. On the day you want to cook them, defrost them well before frying them to avoid oil splashing.

To freeze donuts:

To freeze pre-baked donuts, simply wrap them tightly in plastic wrap individually to prevent crystal formation. It's best to freeze them unglazed and glaze them the day you're ready to eat them.

How to prepare Berlinas

This recipe is perfect for both donuts and Berliners.

If you want to make donuts, simply cut out the doughnuts without cutting out the holes. Once fried, add your favorite filling by making a small incision with a knife and using a syringe or piping bag.
