Cielito Lindo is the perfect appetizer to serve at parties, birthdays, or game nights. It consists of a dip made up of all kinds of layers, always accompanied by melted cheese and nachos.

This isn't a traditionally Mexican recipe, but rather has its origins in Tex-Mex cuisine. Today, it's especially popular in Puerto Rico, where it's known as Cielito Lindo. However, many Spanish-speaking countries have their own versions, and even within each country, the recipe varies from family to family, adapting to individual tastes.



We chose our friend Mariel's recipe, which we discovered the day she brought Cielito Lindo home. Her recipe is super easy to make and SUPER juicy. We decided to pair it with some homemade nachos made with corn tortillas. We'll also show you how to make this recipe in vegan and vegetarian versions below!

How to prepare Cielito Lindo

1. To make the guacamole, mash the avocado in a mortar and add the chopped cilantro. Add a pinch of salt and the juice of one lime.
2. For the pico de gallo, finely chop the tomato, onion, and red bell pepper. Add the chopped cilantro and the juice of one lime.
3. To assemble the cielito lindo, you'll need a baking dish or pan that's ovenproof and deep enough to fit all the layers. First, spread the cream cheese into an even layer. If it's too cold, you can beat it lightly with a fork first to make it easier to spread.

4. Spread the beans on top and then the chili con carne.

5. Cover everything with melted cheese and grill at 220ºC for 15 minutes.

6. Once gratinated, complete the last two layers by carefully spreading the guacamole and finishing it with the pico de gallo.
