This isn't a traditionally Mexican recipe, but rather has its origins in Tex-Mex cuisine. Today, it's especially popular in Puerto Rico, where it's known as Cielito Lindo. However, many Spanish-speaking countries have their own versions, and even within each country, the recipe varies from family to family, adapting to individual tastes.
We chose our friend Mariel's recipe, which we discovered the day she brought Cielito Lindo home. Her recipe is super easy to make and SUPER juicy.
