For the tartar
 400 grs Salmon
 ½ Fennel
 1 teaspoon Capers
 2 tablespoons Soy
 1 tablespoon sesame oil
 1 tablespoon Perrins Sauce
 ½ tablespoon Dijon mustard
 1 pinch of Tabasco
 1 pinch of black pepper
 ½ Onion
For the avocado sauce
 1 Avocado
 90 ml Milk
 ½ Lemon juice
 1 pinch of salt
 50 ml Olive oil
For decoration
 ¼ Mango
 3 Radishes
 2 Yolk
 15 ml Soy sauce

How to prepare salmon tartar

 

1. Remove the skin from the salmon and cut it into cubes.

2. In a bowl, mix the salmon with the chopped onion, chopped capers, and sesame oil.
3. Add the soy sauce, Perrins sauce, black pepper, Dijon mustard, Tabasco, and lime juice.

4. Using a mandolin, slice the fennel into thin strips and add it to the mixture in the bowl.

5. Cover the bowl and marinate in the refrigerator for 15 minutes.
6. In a small bowl, coat an egg yolk with soy sauce and let it cure while the salmon marinates.

7. In a blender, blend the avocado with the milk and lemon juice until smooth.

8. Gradually add the olive oil until the mixture emulsifies and the desired texture is achieved.
9. Plate the salmon tartar, garnishing it with mango, avocado salsa, and radish.
