How to prepare Okonomiyaki

1. Cut the cabbage into thin strips. The thinner the strips, the better the omelet will cook.

2. Add the flour, eggs, cabbage, broth, spring onion, soy sauce, and salt to a bowl and mix well with a spatula or wooden spoon.

3. Place a frying pan over medium heat and add a splash of oil. Spread it evenly over the surface of the pan and heat for a couple of minutes.
4. Pour the mixture into the pan and flatten it well with a spoon. Cover the dough with a lid and reduce the heat to low.

5. Cook over low heat with the lid on for10 minutes . After 10 minutes, the tortilla should easily separate from the edge. If it's still a little stuck, run a spatula around the edges to gently loosen it.
6. Turn the tortilla out onto a plate and return the empty pan to the heat. Cover the pan with strips of bacon, making sure they don't overlap so they don't get raw. Return the tortilla to the pan so the raw side is on the bottom, above the bacon.

7. Put the lid back on and cook.5 more minutes.
8. If you're not going to eat it immediately, you can leave it in the pan with the heat off and the lid on so it finishes cooking and softens, as it's very difficult for it to overcook.
