Mojo or molho is a very popular Canarian sauce. There are many varieties of mojos, but mojo picón is undoubtedly the most popular. It consists of a spicy sauce made with oil, tomato, garlic, and pepper.
The most traditional version is prepared with hot peppers, although different types of chili peppers predominate on each island. If you don't have chili peppers, you can also use red bell peppers, which are sold everywhere.
Spicy or not, mojos often have a strong flavor due to the garlic cloves. However, Lolo, a Canarian chef and close friend of ours, told us there's a secret to preventing mojo from repeating. Simply fry the garlic instead of adding it raw, and voilà—a mojo that doesn't repeat and with a delicious smoky note.
Traditionally, mojo picón was used to accompany wrinkled potatoes, but it's such an addictive sauce that it's now served with all kinds of dishes, including meat, fish, and roasted vegetables.

Other types of Canarian mojo
The word mojo comes from the Portuguese word "molho," meaning sauce. Mojo picón is the most famous mojo in the Canary Islands, but not the only one. All mojos are based on a mixture of garlic, oil, vinegar, and salt. Different ingredients are added to this mixture to create milder or spicier mojos, depending on the dish they are paired with:
