Veal escalope is one of those dishes that takes you straight back to your childhood, a guaranteed hit with kids. Preparing a traditional escalope isn't particularly mysterious, but it's also not particularly fun. That's why we've compared five different recipes, from the most traditional to the most innovative, so you can give a grown-up touch to a dish from your childhood. 

A traditional escalope only requires five steps: seasoning, coating with flour, dipping in egg, coating in breadcrumbs, and frying. From there, we added ingredients, doubled the coatings, and tried out marinades. And then we combined everything at once, resulting in the ultimate escalope. Just kidding, that combination was actually a complete disaster, but it helped us find the key to achieving the perfect recipe: a veal escalope marinated in sour milk or kefir with spices and breaded using the traditional method. Apparently, nothing can beat the breadcrumb coating.

Marinade
 250 grs Sour milk or Kefir or a mixture of 250ml of milk with a teaspoon of lemon juice
 1 teaspoon Garlic powder
 1 teaspoon black pepper
 1 teaspoon sweet paprika
 1 teaspoon Oregano
 1 teaspoon Salt
 1 pinch Cayenne pepper
Breaded
 100 grs Flour
 200 grs Breadcrumbs
 2 Eggs

How to prepare Milanese escalope

1. In a bowl, mix all the marinade ingredients until you get a smooth cream.

2. Dip the escalopes into the marinade, making sure they are well coated. Cover the bowl with plastic wrap and let it rest in the refrigerator for at least1 hour , up to a maximum of12 hours .

3. Place the flour, beaten egg, and breadcrumbs on separate plates. Using a fork, coat the escalopes in flour, dip them in the beaten egg, and finally, coat them in the breadcrumbs, making sure they are completely coated.

4. Fry them in a pan with a finger of oil for1 minute per side.

5. Serve them with a dollop of ketchup and mayonnaise on the side, and be sure to scatter bits of batter all over the kitchen table to faithfully recreate your childhood.
