 3 Raw beets
 75 g brown sugar
 200 grs Coarse salt
 60 ml Gin
 Orange zest
 Thyme

2. Next, grate the 3 beets into a bowl.
3. Add all the marinade ingredients and mix well.

5. Cover the tray with film and marinate the salmon in the refrigerator for 24 hours.
6. After a day, remove the marinade and fillet the salmon.
