Panna cotta is a classic Italian pastry recipe made with cream (panna), gelatin, and jello. Panna cotta belongs to the most wonderful group of desserts: those that quiver a lot when you hit them with a spoon. It's similar to flan but has a softer, creamier texture thanks to the cream. Its flavor is sweet and light, often with a hint of aroma thanks to the vanilla.
The classic panna cotta is usually served cold, accompanied by red berries, honey, or chocolate, but as with all classics, there are many other variations. Our recipe is a healthier and lighter version of the original. We've replaced some of the cream with kefir, a dairy product resulting from the fermentation of milk by a combination of yeast and bacteria (lactobacilli). Kefir has a texture similar to liquid yogurt, and studies show that its consumption is beneficial for the immune system and intestinal flora (Bourrie et al., 2016).
Regarding substitutions, you can prepare it using lactose-free cream and kefir and even replace the gelatin with agar agar (2g of agar agar is equivalent to 4 sheets of gelatin) to make it Halal.

Can I substitute kefir with yogurt?
Both kefir and yogurt are fermented dairy products; however, they are fermented by different microorganisms and therefore develop different textures and flavors. Therefore, yogurt isn't an exact substitute for kefir, but you can substitute it with half yogurt and half milk to achieve a kefir-like texture.
