 10 grs Bicarbonate
 3 l Water
 1 Lemon
 5 grs Salt
 80 grs Tahini
 3 grs Cumin

How to prepare a delicious homemade hummus

1. Place the chickpeas in a large bowl, cover with water, and add a teaspoon of baking soda (5 g). Soak the chickpeas overnight.

2. Once hydrated, rinse them with water and drain them.

3. In a pot, add the chickpeas, a liter and a half of water, and another teaspoon of baking soda. Bring the water to a boil and cook the chickpeas for30 minutes .

4. Meanwhile, blend the juice of one lemon, half a garlic clove, and one teaspoon of salt in a food processor and blend well. Add the tahini and a couple of tablespoons of water and blend again.

5. Drain the chickpeas and add them to the food processor. Add a teaspoon of cumin and blend until smooth.

6. Serve in a bowl. Draw a spiral groove over the hummus with a spoon and add a drizzle of olive oil. Finish with a sprinkle of paprika and serve with crudités and pita bread.

How long should chickpeas be soaked?

Dried chickpeas should be covered with twice their volume of water and left to soak for 12 to 24 hours before cooking. 

How to prepare flavored hummus?

If you're tired of traditional hummus, you can add other ingredients to create different flavors. Some of the best combinations are: hummus with black olives, hummus with piquillo peppers, and hummus with beets. To prepare any of these three versions, simply add 100g of your favorite ingredient to the final mixture and blend well until fully incorporated.
