Imagine the tangy, herbaceous depth of traditional Georgian tkemali—now reimagined with the unexpected tartness of green gooseberries. This bright, vibrant sauce captures the soul of the Caucasus, where sour plum or cherry plum is the classic base. Yet green gooseberries, with their firm flesh and piquant acidity, prove an inspired substitute. The result is a vivid emerald condiment bursting with fresh dill, cilantro, mint, and a whisper of chili heat. Perfect alongside grilled meats, roasted vegetables, or simply slathered on crusty bread, this no-cook (after a quick blanch) sauce comes together in minutes. Whether you are foraging from your garden or sourcing from the market, this recipe celebrates the bounty of green fruits and the art of preserving summer's brightness.
About This Recipe
Traditional Georgian tkemali hails from the country's fertile valleys, where sour plums (tkemali in Georgian) grow abundantly. The sauce is a staple alongside khinkali dumplings, mtsvadi skewers, and earthy bean dishes. Here, we swap the classic plum for unripe gooseberries—often called green gooseberries"—which offer a similar tartness and firm structure. The quick blanching softens the berries just enough to purée smoothly
