Tortillas
 400 grs Maseca Flour (It is the only nitxtamalized corn flour, if you can't find Maseca, use normal wheat flour)
 350 ml Water
 10 grs Salt
Stuffed
 1 kg Pork loin head in 3 cm pieces
 1 Onion
 50 grams Chipotle in adobo (Buy at a Latin American store)
 3 grams of oregano
 3 grs Cumin
 30 grams of achiote paste (buy at a Latin American product store)
 2 Bay leaves
 200 ml Orange juice
 20 ml Vinegar
 Salt
Accompaniment
 2 Avocados
 1 Lemon
 1 Red onion
 5 Limes
 Salt
 Cilantro

How to prepare Cochinita Pibil Tacos

 

Start by preparing the filling

1. Mix the chipotle, oregano, cumin, achiote paste, bay leaf, orange juice, vinegar, and salt in a blender, blending everything well.

2. Place the loin in 3 cm pieces in a baking dish, adding a julienned onion. Pour the spice mix over the meat and marinate it for two hours. Before you throw your hands up at us, yes, we are suggesting you prepare your meat in the oven. Is this the most authentic preparation method? No. Is it worth it because it's a much more efficient method that still delivers great results? Definitely.

3. Cover the dish with aluminum foil and roast it in the oven at 150ºC for3 hours .
4. When it's ready, shred the meat with two forks.

Prepare the pickled onion while the marinate the meat
5. Chop the red onion into julienne strips.
6. In a bowl, squeeze a lemon and add a pinch of salt.
7. Add the onion, cover with film and let it rest in the refrigerator for at least2 hours .

Prepare the tortillas one hour before the meat is ready.
8. Mix the salt with the flour first and then add the water.
9. Knead with your hands until you create a smooth, uniform dough, without lumps of flour.

10. Form a ball and let it rest covered with a damp cloth for30 minutes .

11. Divide the dough into 30-gram balls and form the tortillas using a tortilla press and two sheets of baking paper. You can also make it by flattening the balls between two hard surfaces, such as two cutting boards, but remember to place baking paper on both the top and bottom to prevent them from sticking.

12. Mark the tortillas in the pan over high heat1 minute on each side. Keep them warm by covering them with a damp cloth. If you need to reheat them later, you can place them in the microwave for 30 seconds with the cloth over them to prevent them from drying out.

13. Place the filling on the warm tortilla, top with the pickled onion, and top with a wedge of avocado and a cilantro leaf.

Where to buy corn tortillas?

Corn tortillas can currently be purchased at most supermarkets (Mercadona, Carrefour, Hipercor, etc.). However, if you're looking for authentic corn tortillas (and aren't too lazy to make them), it's best to go to a Latin American store, where you can often order freshly made tortillas to pick up.

Can you make tortillas without a tortilla press?

A tortilla press is a very convenient tool, but it's not essential for making tortillas. If you don't have one, you can also shape them by flattening the dough balls between two cutting boards. Just make sure to cover both sides of the tortilla with parchment paper to prevent it from sticking to the wood, and you're done.
