Chocolate mousse is a dessert with an old-fashioned feel, but for good reason it never goes out of style: it's absolutely delicious. It can be eaten alone or as part of a more complex dessert, and therefore there are countless versions with different ingredients.

 80 ml Milk
 1 Yolk
 4 Egg whites
 25 g Sugar

How to prepare chocolate mousse

1. Prepare a double boiler by placing a large metal or glass bowl over a pot of boiling water.
2. Add the chopped chocolate and milk to the bowl. Reduce the heat and wait for the chocolate to melt.

3. Stir with a whisk to combine the milk and chocolate. Remove the bowl from the double boiler to allow the mixture to cool.
4. Add the egg yolk once the chocolate is warm to the touch.

5. In another bowl, beat the egg whites until they form soft peaks. Begin adding the sugar little by little while continuing to beat until they reach stiff peaks. You'll know they're ready when you can turn the bowl upside down and the egg whites don't fall out.

〉Beating egg whites can be hell if you don't follow one basic rule: the egg whites must not come into contact with any type of fat, neither from dirty utensils nor from yolk residue.

6. When the chocolate is at room temperature, fold in a third of the egg whites with a silicone spatula, using circular motions to eliminate any air bubbles.

7. Add the rest of the egg whites, mixing as little as possible to avoid removing any incorporated air.
8. Divide the mousse into individual containers and let it rest in the refrigerator for at least1 hour .
9. Sprinkle with salt flakes just before serving.
10. Ask everyone present to be quiet, bring the mousse up to your ear, and enjoy the sound the spoon makes as it dips into the chocolate.

 

How long does the mousse last?

The mousse must be kept in the refrigerator because it often contains eggs or dairy products and can be stored for up to 3 days.

How to get a light mousse

The key to achieving a light mousse is the egg white. It's very important to separate the egg whites from the yolks and whip them separately, as they will provide air and volume to our mousse. Once the rest of the ingredients are mixed, we must wait for them to cool to prevent the egg whites from losing volume. When adding the egg whites, use circular movements with a spatula, avoiding abrupt mixing to retain as many air bubbles as possible.

How to fix a runny or curdled mousse

If the mousse is runny, wait for the mixture to cool, whip 2 more egg whites, and fold them in with circular motions. If it's curdled, beat it first to remove any lumps, cool it, and then fold in 2 more whipped egg whites.
