Meat cannelloni is a typical recipe from our mothers and grandmothers. It's a typical home-cooked dish that doesn't taste as good in a restaurant.

Traditionally, cannelloni was made with leftover meat from broth. In Catalonia, it became customary to eat them on December 26th, Boxing Day, with the leftover meat from Christmas broth.

 100 gr Parmesan cheese

1. Wash and chop the fresh mushrooms. In a large skillet, cook them with olive oil until they are golden brown and have stopped losing their water.

2. Shred the roasted chicken using two forks.

3. Sprinkle the mushrooms with the rancid wine and cook until the alcohol evaporates.

4. Add the caramelized onion and shredded chicken to the pan and stir well.

5. If you have any, you can pour any remaining chicken juice into the pan to flavor the mixture.

6. Add a tablespoon of bechamel sauce to give the filling consistency and season with salt and pepper to taste.

8. To form the cannelloni, place a little filling on top of each sheet and wrap it loosely so that it doesn't spill out.

How to freeze cannelloni

Yes, of course! In fact, I don't know any grandmother who makes cannelloni the same day they're going to be eaten. Ideally, you should freeze the cannelloni before baking, covering the tray with plastic wrap with the béchamel and cheese already included. On the day you're going to eat them, take the tray out a few hours beforehand and once defrosted, bake it as you normally would. If you have leftover cooked cannelloni and want to freeze them, you can do that too. Just be careful when reheating them because if you overcook them, they'll be very dry.
