How to prepare Bechamel sauce

1. Add the butter to a saucepan and melt it over low heat.

2. Once the butter is melted, add all the flour and mix it well, cooking the mixture for a couple of minutes.

3. Add a splash of cold milk and stir well with a whisk until the mixture is well combined and all lumps are gone. Although it may not seem like it, it's much easier to blend a mixture with a little liquid than with a lot.

4. Gradually add the remaining milk, stirring constantly to prevent lumps from forming, until the mixture thickens. Depending on your intended use, you can make a thinner or thinner béchamel. We used a thin béchamel for cannelloni and a thicker one for croquettes, for example.

Instead of trying to break them up one by one with a spoon, pour the béchamel into a bowl, add a splash of milk, and blend it with a hand blender for a couple of minutes. Once you have a smooth sauce, you can return it to the pan to finish cooking.

What do I do if my bechamel is too thick?

If your bechamel sauce is too thick, you can thin it out by adding milk little by little and stirring with a whisk until you achieve the desired consistency.

And too liquid?

If, on the other hand, your béchamel sauce is too runny, don't add flour directly, as you risk undercooking it and ending up with raw flour. The easiest way is to let the béchamel sauce simmer a little longer until some of the milk evaporates.
