Although not very well known, the marmelo banana, also called fig banana, can be used in various dishes. In Brazil, it is most easily found in Minas Gerais and Goiás, but it is not native to Brazil; it comes from the Philippines. Want to learn recipes that use this variety of banana? Check it out:

1. Fried plantain-quince

Ingredients

  • 1 ripe banana
  • Frying oil
  • Paper towel

Preparation method

  • Peel and slice the banana;
  • In a frying pan, add the oil and wait for it to heat up;
  • Fry the banana slices;
  • Once golden brown, remove from the pan and place on paper towels;
  • Enjoy!
  • 2. Simple banana-quince jam

    Ingredients

    • 23 ripe plantains
    • 2 kg of sugar

    Preparation method

  • Peel the bananas and mash them;
  • In a saucepan, add the sugar;
  • Next, mix in the mashed bananas;
  • Let it sit for 5 minutes;
  • Start stirring and keep the heat low;
  • When the jam boils, stir constantly until it reaches the desired consistency;
  • As soon as it comes away from the bottom of the pan and the candy is a darker brown color, turn off the heat;
  • It will be ready to serve.
  • 3. Banana-quince dessert with chocolate

    Ingredients

    • 6 dozen plantain bananas
    • 1 and a half kg of sugar
    • 2 tablespoons of margarine
    • 2 tablespoons of chocolate powder

    Preparation method

  • Peel and chop the bananas;
  • In a saucepan, place the chopped bananas and sugar;
  • Place over high heat and stir constantly to prevent burning;
  • Gradually add the remaining sugar to thicken the jam;
  • When it reaches the desired consistency, add the margarine and chocolate powder;
  • Mix a little more and turn off the heat;
  • Let it cool and then serve.
  • 4. Banana-quince with meringue cream

    Ingredients

    • 6 marmelo bananas
    • Frying oil
    • 1 cup of sugar for the syrup
    • 1 American cup of water
    • 3 pinches of ground cinnamon
    • 1/2 liter of milk
    • 2 tablespoons of cornstarch
    • 4 tablespoons of sugar for the cream
    • 2 gems
    • 1/2 teaspoon of vanilla extract
    • 2 egg whites
    • 3 tablespoons of sugar for the meringue

    Preparation method

  • Cut the bananas into thick slices;
  • Fry in hot oil and set aside;
  • In a saucepan, combine the sugar for the syrup, the water, and the cinnamon;
  • Bring to a boil;
  • Pour the mixture into a baking dish and cover with the fried bananas;
  • In another saucepan, mix the cornstarch, sugar for the cream, and egg yolks;
  • Bring to a boil and stir until thickened;
  • Turn off the heat and add the vanilla extract;
  • Place the cream on top of the bananas;
  • Beat the egg whites until stiff peaks form and add the sugar for the meringues;
  • Stir gently to incorporate and pour over the cream;
  • Bake in the oven for approximately 10 minutes;
  • Serve as soon as it cools down.
  • 5. Banana-quince pie

    Ingredients

    • 2 gems
    • 2 cans of milk
    • 1 can of condensed milk
    • 1 tablespoon of cornstarch
    • 1 can of heavy cream
    • 6 ripe plantains
    • 250 g of sugar
    • 6 egg whites, beaten to stiff peaks
    • 5 tablespoons of refined sugar
    • 1 can of heavy cream (without whey) for the third layer.
    • 1 packet of shredded coconut flakes
    • Chopped bananas for garnish

    Preparation method

  • In a blender, combine the egg yolks, milk, condensed milk, and heavy cream;
  • Bring to a boil and stir until thickened;
  • Turn off the heat, stir in the cream, and let it cool.
  • Place the first layer in a baking dish and set aside;
  • Prepare the second layer by mixing the bananas and sugar until you get a jam-like consistency;
  • Pour the banana dessert over the cream of the first layer;
  • Begin the third layer by beating the egg whites until stiff peaks form, then add the granulated sugar and the heavy cream (without whey) in a mixer;
  • Once it's smooth, pour it over the second layer of the pie;
  • Sprinkle grated coconut on top and garnish with bananas;
  • Wrap the baking dish in aluminum foil and refrigerate.
  • Once it hardens, serve yourself.
  • 6. Green banana and quince soup

    Ingredients

    • 8 chopped green plantains
    • Water for preserving the bananas
    • 3 tablespoons of soybean oil
    • 1/2 small chicken breast, diced and seasoned
    • 100g of paio sausage, diced
    • 3 cloves of minced garlic
    • 1 small chopped onion
    • 1 pinch of saffron
    • 1 pinch of dried and crushed coriander
    • Hot or room temperature water to cover the bananas.
    • 1/2 a sweet pepper
    • 1/2 finger chili pepper
    • Fresh herbs to taste
    • Salt to taste

    Preparation method

  • Place the chopped bananas in the water and set aside;
  • Sauté the chicken breast;
  • Add the paio sausage and sauté it as well;
  • Next, add the garlic and onion;
  • Add the saffron and coriander;
  • Place the bananas in the bowl and cover with hot water;
  • Let it boil until the bananas are cooked;
  • After 30 minutes, add the peppers and the green herbs;
  • Mix well and season with salt;
  • Remove from heat and serve.
  • 7. Banana-quince with pork

    Ingredients

    • 250 g of ground pork leg
    • Salt to taste
    • Turmeric to taste
    • Annatto to taste
    • 2 tablespoons of olive oil
    • 1 clove of crushed garlic
    • 1 small chopped onion
    • 4 tablespoons of chopped red bell pepper
    • 4 tablespoons of chopped green bell pepper
    • 1 finger chili pepper, seeded and chopped
    • 2 tablespoons of water
    • 4 tablespoons of chopped parsley and chives
    • 6 ripe plantains

    Preparation method

  • Season the pork leg with salt, turmeric, and paprika. Set aside.
  • In a frying pan, brown the garlic in olive oil;
  • Add the meat, onion, bell peppers, and chili pepper and sauté;
  • When it starts to stick to the bottom, add the water and let it cook;
  • Add the parsley and chives. Set aside.
  • Make a lengthwise cut in the bananas, but without separating the two halves;
  • Fill with the prepared meat;
  • Bake in a preheated oven at 180 degrees for 20 minutes;
