Ingredients 🍽️

🍶 500 ml. of cream 35% mg (cream or whipping cream)

🥛 100 ml of whole milk

🍚 100 g of white sugar

🍦 1 tablespoon vanilla essence or a vanilla pod

🍃 6 sheets of edible gelatin type 240º Bloom (12 g, 6 sheets for 1/2 litre of liquid)

🧀 150 gr. of soft cream cheese

🍯 To decorate, use caramel (to taste) and strawberry syrup, and a berry coulis also goes very well.

🍩 Final decoration or coating of the fried milk:

🍂 1 Teaspoon of Cinnamon powder

🍬 100 g of normal sugar

 

This recipe is a typical Italian dessert that is very popular in three regions: Piedmont, Valle d’Aosta and Umbria. Although it originates more in the north, since Piedmont is the largest producer of milk, this “cooked cream” is eaten throughout the country.

I have done some research in several books to find out a little more about it. Alessandro Molinari talks about panna cotta in his treatise “ La Cucina Piemontese” which places it in Piedmont . In “800 Ricette Tradizionali” however, they tell us that in the region of Umbria “the green heart of Italy” they claim the recipe as their own in some corner near the shores of Lake Trasimeno. Well, wherever it is, this dessert is delicious, what more can I say.

Simple but exceptionally delicious, as long as you use quality cream with the right amount of fat. In this case, the dairy product plays a fundamental role. In today’s recipe, we’ll stick to one or the other. I add a touch of cream cheese to give it a little more texture and flavour than just dairy, and I also serve it with caramel , but you can find many different recipes: strawberry panna cotta , blackberry panna cotta, vanilla panna cotta, with red berries, Xixona nougat panna cotta , with a little amaretto or rum, lemon… of course, let your imagination run wild.

A creamy cheese dessert that will please both adults and children, delicious, simple and not heavy at all. We can even play with the recipe to change the moulds for whatever the little ones in the house want, so you will have them almost playing with them in the kitchen. I hope you like it and are encouraged to prepare it at home.

 

The Italian Cheese Panna Cotta: Step-by-step Recipe

 

 

Preparing the cheese panna cotta

For this dessert you can use the mold or molds (as in this case) that you like the most. I used the flan molds to make individual portions, but a large one will also work very well.

  1. Pour the cream into a saucepan and heat it slightly. Add the sugar, vanilla essence, milk and cream cheese and heat slowly without letting it boil until the cheese is mixed with the cream.
  2. We mix everything together, integrating the flavours, and leave it at the minimum temperature to add the gelatin. You can use brown sugar instead of white sugar, it will be a little darker, with a more golden colour and just as good.
  3. Prepare the gelatin according to the instructions on the package. Dissolve the gelatin leaves in a cup of warm water. Soak it in the water for 5 minutes. The leaves do not dissolve, but they soften. After this time, pick them up with your hands and squeeze them gently. Then add them to the rest of the ingredients in the saucepan and stir until they dissolve completely, mixing well with a fork or spoon. Use a whisk to mix (do not use a blender as it creates a lot of foam and bubbles).
  4. We divide this cream into the flan-type glasses that we have prepared and let them rest in the refrigerator before unmolding them. It is best to leave them overnight if possible and before serving, we unmold them as if they were flans.

 

 

Tips for a delicious panna cotta

  • Unmolding is easy, the top will need some help, we can run a knife along the sides so that it comes off without any problem, it is the stickiest area. 
  • Another trick to unmold without any problems would be to put the mold in very hot water for a few seconds and turn it upside down, I am sure you won’t have any problems.
  • Panna cotta is best prepared the next day, but if we are in a hurry, it can be done in two or three hours. Serve with a few drops of caramel and a little strawberry jam, or whatever you like best, mango jam, red berries, orange, but mostly love. Let your imagination run wild.
