Ingredients

🌾 300 g of special wheat flour for baking
🌰 100 g of dried fruit of your choice (seeds, hazelnuts, almonds, walnuts…)
🎃 300 g of pumpkin
🍬 150 g of sugar
🧈 100 g of butter
🥚 4 large eggs
🧂 16 g of baking powder (one sachet)
🍂 1 dessert spoon of ground cinnamon
🧂 ½ dessert spoon of salt
❄️ Powdered sugar or icing sugar for decoration

 

One of the star products of the autumn and winter garden is the pumpkin.

 Although there is a great variety of pumpkins on the market, my favorite, both for savory and sweet preparations, is the curcubita moschata , that is, the traditional peanut pumpkin .

Pumpkin is a very versatile kitchen item. You can roast it in the oven, fry it, boil it, make creams or purées , soups, use it as a garnish and, of course, make a wide variety of desserts. One of our favourite cakes , one of those we make at home in season, is this pumpkin cake.

 

 

As the queen of winter and in commemoration of the Halloween holiday , we have prepared a delicious and healthy pumpkin cake. I am going to use the pumpkin once it has been cooked and well drained.

It is important that we try to eliminate as much water as possible that may have been absorbed during cooking. If we prefer, we can cook the pumpkin in the microwave instead of boiling it. This way we will make sure that it does not have any water inside. In both cases we will let it cool down before we can use it.

This cake, in addition to containing pumpkin, contains a selection of nuts that provide healthy fats to our dessert and a delicious crunchy touch. We will use them not only as a surface decoration of the cake, but we will also add them to the ingredients of the dough. In this way, we will enjoy the delicious flavor that the sunflower seeds will provide to this wonderful cake, as well as all their properties and nutrients.

How to make a Pumpkin Cake: Full Step-ny-step Recipe

  1. Peel the pumpkin and remove the seeds and any internal filaments it may have. Cook the chopped pumpkin for 30 minutes until soft. Drain the cooking water and place the pumpkin in a colander for a while. Once the pumpkin is cool and drained, mash it with a fork and set aside.
  2. In a bowl, add the eggs and sugar. Beat well. Add the melted butter and mix the mixture. Add the mashed pumpkin, mix and set aside.
  3. In another bowl, mix the flour with the baking powder, cinnamon and a pinch of salt. Add this mixture of dry ingredients to the mixture of liquids and mix, using circular movements, until obtaining a homogeneous cream. It is advisable to incorporate the flour by sifting it.
  4. Add the nuts that we have previously peeled to the mixture and mix them in. Grease an elongated mould with butter and line it with baking paper. Pour in the cake batter and sprinkle the rest of the nuts chosen on top.

Baking and final presentation of the cake

  1. With the oven preheated to 180º C, bake the cake for 45 minutes. Make sure the cake is well cooked by pricking it with the tip of a knife and checking that it comes out clean.
  2. Leave the cake in the same mould on a rack for 10 minutes before removing it from the mould. Once removed from the mould, keep it on the rack until it cools. Once cool, decorate it with icing sugar or powdered sugar. Enjoy!
