Ingredients

Today’s recipe has a mix of flavors that we really like as a dessert and it works very well. Banana, chocolate and orange , all combined in a soft sponge cake , filled with a delicious cream and an intense topping, which results in a delicious cake .

It is a carrot cake style cake in terms of shape and texture and considering how pretty and delicious it is, it is not difficult to prepare. It is ideal to celebrate a birthday or a special day when we want to show off a little more. We have not yet found anyone who does not like it.

The topping is made of intense dark chocolate , which could be substituted with a slightly softer chocolate, but we like the bitter contrast that goes very well with the other sweet flavours, such as the mascarpone-based orange cream, which is a real delight . Step by step preparation

  1. We start by preparing the cake. Preheat the oven to 180º C.
  2. Peel and cut the bananas into slices. Melt the butter in a frying pan over medium heat. Add the bananas and sauté for a few minutes until they soften.
  3. We line the bottom of a mould (ours is a 22cm round one) with greaseproof paper and grease the sides with butter. We pour the bananas into the bottom of the mould. We set aside.
  4. In a large bowl, beat the eggs with the sugar and milk. Add the orange zest and juice. Beat again until the ingredients are combined. Using a sieve or strainer, add the flour, baking powder and salt. Mix with a spatula until everything is combined and you have a homogeneous mixture.
  5. Pour the mixture into the mould and bake for 45–55 minutes. Prick with a knife, if it comes out clean it is ready. Let it cool and remove from the mould. Set aside.

 

 

Preparation of the orange cream

  1. While the cake is cooling, prepare the orange cream for the filling. In a large bowl, add the cream, mascarpone cheese, orange juice and zest to taste. Beat with an electric whisk until you get a spreadable cream.
  2. We cut the cake into three horizontal pieces with a large serrated knife. This will give us the three layers of cake we need. We leave the bottom layer with the banana, touching the plate on which we are going to serve it. We cover the first layer of the cake with the orange cream, using the spatula to spread it well over the entire surface.
  3. Place another layer of sponge cake on top of the cream and repeat the process of covering it with the cream. Cover with the last layer of sponge cake and set aside. Prepare the chocolate topping.

 

 

Chocolate coating preparation and final assembly

  1. Put the cream and chocolate in a saucepan over medium heat. Stir until melted. Remove from heat and mix well until you have a smooth chocolate cream.
  2. We cover the surface of the last layer of cake with the chocolate cream, spread it well with the spatula and let it cool. When the chocolate is no longer hot, we can decorate with more grated chocolate or, to our taste, with shavings, candied orange or three-chocolate balls.

 

My Little Tips for a perfect banana, chocolate and orange cake

  • It can be eaten at room temperature, but a little time in the fridge is fine. The banana base tends to darken.
  • If we don’t want to have all the banana on the base, we can cut it into smaller pieces, flour it and put it directly into the dough so that it is distributed throughout the cake. It is advisable to reduce the amount of banana so that the dough can still rise when baking; one banana would be enough.
