Ingredients

🍗 6 chicken legs or thighs
🧅 1 large onion
🍷 200 ml white wine
🍄 300 g mushrooms
🫒 Extra virgin olive oil (4 tablespoons)
🍅 3 ripe tomatoes
🌽 30 g corn starch (Maizena)
🥣 300 ml chicken broth or water
🌿 Fresh parsley
🧂 Salt (to taste)

This is a chicken recipe that is so simple that it can save you in a pinch, as it is made with whatever you have at home. 

It usually has ingredients that are common at home, such as onion, garlic, white wine… but you can add pepper or other vegetables. You will only need to buy the chicken and some mushrooms .

This dish is very easy to prepare: a chicken stew with a wine and tomato sauce, which is cooked over a low heat for just over 1 hour and results in a wonderful, tasty and filling dish. You will see how juicy the chicken is and the sauce is delicious, perfect for dipping a good piece of bread.

Sealing chicken before cooking

  1. For this stew we can use chicken pieces, but I always recommend that you use pieces with bones, as they are usually the tastiest parts of the chicken. They are delicious with these chicken legs or thighs.
  2. Season the chicken pieces with salt and pepper and coat them with cornstarch (wheat flour would also work). Remove the excess flour so as not to incorporate too much into the stew. Set aside on a plate.
  3. In a large saucepan, heat about 4 tablespoons of extra virgin olive oil. Add the chicken and brown it well on all sides. Once the chicken is browned, remove it to a plate and set aside. In the same oil that the chicken was browned in, cook the onion and garlic.

 




 

Preparation of Chicken Stew with Mushrooms

  1. Peel the garlic cloves and crush them with a garlic masher (or slice them very finely). Cut the onion into small cubes and add everything to the pan. Sauté for about 10 minutes, stirring occasionally. Season with salt and pepper.
  2. Grate or crush the tomatoes and add to the onion. Put the chicken pieces back into the pot and stir everything to combine the ingredients and flavours. Add the white wine and let the alcohol evaporate for a few minutes before adding the chicken stock or water.
  3. We taste the salt and if necessary we add more salt and pepper. We cover the pot and let the chicken cook for about 30–35 minutes on medium heat.
  4. After this time, wash and slice the mushrooms. Remove any bits of dirt that they usually contain, as we don’t want them to spoil the stew. Continue cooking with the pot covered for 15 minutes and then remove the lid. Taste for salt and adjust if necessary.
  5. We continue the process for another 15 minutes until the chicken stew is ready. We can serve the chicken immediately with some boiled potatoes, some baked potatoes or a little white rice.

  • We can add a little finely chopped parsley to give colour and aroma to the stew. This tip is optional. Even a touch of spice if not the smallest ones are going to eat it, is great. Just a little freshly ground black pepper improves it a lot.
