Ingredients
🍈 30 ml. extra virgin olive oil
🍗 1.5 kg of chicken (we recommend using thighs)
🧂 Salt to taste
🌶️ Ground black pepper to taste
🧅 1 medium onion (about 200 g.)
🧄 2 cloves of garlic
🥕 1 medium carrot (about 150 g.)
🍃 1 bay leaf
🌿 1 teaspoon thyme
🌿 1 teaspoon of oregano
🌾 1 tablespoon of wheat flour (25 g.)
🍲 800 ml. chicken broth
🍷 Half a glass of dry white wine (125 ml.)
Today, we are going to prepare a very traditional chicken recipe from Spanish cuisine. A humble dish, with ingredients that are easy to find, inexpensive and that will give us a tasty and delicious dish. Today we prepare chicken in grandma’s sauce.
Surely you also have the memory of many Sundays at your grandmother’s house, a house filled with the smell that came from the kitchen when our dear grandmother prepared this dish, a smell that comes from her sauce, the reduction of white wine and the sofrito . Obviously, like every master, grandmothers also have their own book. Each grandmother gives her special touch to this recipe. Surely yours has always had it. We have rescued our favorite recipe, the most traditional and the one that is followed in most homes and restaurants to prepare this great dish .

Grandma’s Chicken in Sauce Recipe
Step by step preparation
🧂 Step 1: Season the Chicken
Season the chicken thighs with salt and pepper. Place a saucepan over high heat with the olive oil to warm up.
🧅 Step 2: Prep the Vegetables
While the oil heats, prepare the garlic, onion, and carrot. Leave the garlic cloves in their skins, finely chop the onion, and dice the carrot into small cubes.
🍗 Step 3: Sear the Chicken
Once the oil is hot, add the chicken and sear until golden brown on all sides (about 2 minutes per side). Remove the chicken and set aside on a plate.
🔥 Step 4: Cook the Garlic
Lower the heat to medium and allow the pan to cool slightly. Add a little more olive oil, then cook the garlic cloves for about 1 minute on each side.
🧄 Step 5: Sauté the Onion and Bay Leaf
Add the onion and bay leaf to the pan, stirring well. Use a spatula to scrape up any browned bits from the chicken for extra flavor. Add salt to taste, and cook the onion for about 5 minutes.
🥕 Step 6: Add the Carrot
Add the diced carrot to the pan, mix everything, and cook for another 5 minutes.
🌿 Step 7: Add Seasonings and Wine
Increase the heat slightly and add the flour, thyme, and oregano. Stir everything into the sofrito to combine, then add the wine and cook for 1-2 minutes.
🍲 Step 8: Add Chicken Broth and Return Chicken
Pour in the chicken broth and wait for the mixture to start boiling. Add the seared chicken back to the pan, ensuring it is well covered by the broth.
🕰️ Step 9: Slow Cook
Lower the heat to medium and let the stew simmer for about 40 minutes, until the chicken is tender and the sauce has thickened.

- We have preferred to use chicken thighs for this recipe as it is the most tender and juicy part, but you could prepare it with a whole chicken cut into pieces. It depends on your preferences, there are many people who also add the breast.
