The Plum cake is a traditional type of dessert from England.

In this case, the crumb is rather juicy and dense and has pieces of candied or candied fruit inside, very Christmassy . This cake that we bring you today that you can prepare for the next Christmas that is about to arrive. Of course, do not miss all my Christmas recipes & desserts to effortlessly surprise your guests.

This very characteristic English cake with candied or preserved fruit can be customized based on our preferences, incorporating those types of fruit that we like the most. Another option, if you are not a big fan of this type of fruit, you can incorporate dried fruits. Walnuts go perfectly, although dried apricots or raisins can also be used.

The classic plum cake is incredibly easy to prepare and, because it is very moist, it will stay in perfect condition for at least two days, as long as we store it in an airtight container and in the right conditions.

History of the plum cake

The reason why the main ingredients of plum cake are butter and sugar is because it was created so that British sailors could gain the energy they needed during the long voyages they took to return to their overseas colonies.

This cake kept in good condition for a long time, so it was the perfect cake for them. After a while, the French created their own version of this cake, giving it that characteristic rectangular shape and incorporating chocolate, lemon or apple into their recipe.

Step by step preparation

  1. We start by preheating the oven to 180º C.
  2. We hydrate the raisins with rum.
  3. We beat the sugar together with the butter with the mixer.
  4. We add the eggs one by one, integrating them one by one before adding the next.
  5. We sift the yeast, flour and salt and mix with the previous ingredients.
  6. We add the rum and mix again.
  7. We drain the raisins.
  8. We pass the raisins through the flour before adding them to the dough. This way, they won’t sink.

Molded and baked

  1. We put the dough in a mold, previously greased with oil or butter and lined with a piece of greaseproof paper.
  2. Bake for 45 minutes at 180º C.
  3. We check that it is well done by sticking a toothpick into the center. If the toothpick comes out clean, it is ready.
  4. To decorate our plum cake, we place some nuts, raisins and a few candied fruits on top.
  5. And now we will have this delicious plum cake ready to enjoy with our family and friends on these special dates. Delicious!

My Tips for a perfect Christmas plum cake

  • Make sure to use fresh, good quality candied fruits, raisins and nuts. Soak them in rum or brandy for a more intense and juicy flavour.
  • When adding the wet ingredients to the dry ingredients, mix only as much as necessary to prevent the plum cake from becoming dense or gummy.
  • Choose a plum cake pan and grease it well with butter or line it with baking paper for easy and clean unmolding.
